This is an award winning coffee from Mexico’s Cup Of Excellence, earning 6th place in 2022.
A coffee we considered for competition, this natural anaerobic delighted us with its vibrant red fruit flavors and deep chocolate sweetness.
Finca Huehuetepan
Finca Huehuetepan is located at 1,350 m.a.s.l. in the municipality of Cosautlán de Carvajal, Veracruz. It has been in the family for 4 generations. This farm mostly harvests Typica varietals and measures approximately 23 hectares.
Eleven years ago, Carlos began sorting the coffee that was produced on the farm, adding new varieties. In 2018, the farm began experimenting with processes other than washed aided by a friend from Taiwan. The farm began processing naturals and honeys as well as prolonged fermentations.
With this coffee was, it was the second consecutive year the farm achieved a top 10 place in Mexico’s COE, having maintained their presence in this exclusive competition up to 2025.
Anaerobic Natural
This coffee was fermented for 120 hours in a dark fermenter tank with an airlock. The drying process involved the fermentation of coffee fruits in an oxygen-free tank that preserves natural yeasts and other microorganisms.
Coffee was dried in African raised beds for 26 days in a combination of direct sunlight and shade with the goal of maintaining a consistent drying temperature of up to 40C.
